Klink Family Famous Ham Glaze Recipe

Method:

  1. In a saucepan, at a low temperature, melt butter

  2. Turn heat up to a medium temperature

  3. Add mustard, and tamarind chutney and stir to combine

  4. Add rum and stir until warm


To Prepare:

Score ham: Carefully slide your fingers between the skin and fat to remove the skin, leaving the fat layer. Make shallow cuts into the fat (not the meat) to create the diamond effect (or ask your butcher to do this for you).

  1. Preheat oven to 150C.

  2. Double line a tray with baking paper, and place your ham on it.

  3. Place ham in oven for 15 minutes.

  4. Remove the ham from the oven and increase the temperature to 180C.

  5. Brush the ham generously with glaze and coat the glaze with a sprinkle of Rib Rocker and place in the oven.

  6. Baste the ham after 15 minutes, again at the 45-minute point, with a final baste at 1 hour.

  7. After 1 hour 15 minutes, remove the ham from the oven and allow to rest before carving.

Additionally, you can add pineapple and cloves at the 44-minute point. This is completely optional and only for looks as a centrepiece.
